Adventures In Experimental Student Cuisine, Episode 001: "The Bok Choy Casadilla Of Doom"

2 Tomato-Basil Tortillas
1/2 Cup Finely Grated Mozzarella
1/2 Cup Finely Grated Cheddar
One Head Of Bok Choy
Several Sliced Kalamata Olives
Armadillo Barbeque Sauce

Preheat oven to 350 degrees. Spread first tortilla with barbeque sauce and sprinkle with olive slices and capers. Top with most of the grated cheese and cover with second tortilla. Cut bok choy lengthwise into sixths and place on top. Sprinkle with remaining cheese and cook until cheese topping is browned. Serves 1-2 bewildered friends/relatives/cellmates.
